The Cellar
Soaked cold on skins for up to 24 hours. Juice withdrawn and skins lightly pressed. Directly inoculated in stainless tanks. Fermentation is stopped when require alcohol level of 8 is achieved.
Unoaked and bottled directly after fermentation.
