The Cellar
When grapes arrive in the winery, where they are destem and press, it’s the beginning of the creation process for these great whites of Burgundy. Chardonnay’s juice, after few days of rests in vats, amazing colours going from the bright and nervous yellow of the youth to the golden reflects with the age wisdom.
White wines from the estate gives a nice diversity coming from the famous climats de Bourgogne : the fruity touch from Savigny lès Beaune and Pouilly Fuissé, the greedy of Monthélie, the generosity of Chassagne Montrachet , the opulence of Meursault, the grace of Puligny Montrachet, the supremacy of Corton Charlemagne.
Harvest isn’t sulphated. The first addition of SO2 is made when the malolactic fermentation is achieved. The wine rests in oak barrels during 11 months.
