The Vineyard
The grapes for DMZ rosé are grown in vineyards planted on weathered granite soils in Stellenbosch. Trellised and bush vines are managed to ensure natural high acidity and full flavor concentration. Fruiting zones are managed to encourage sunlight exposure onto the grapes, allowing them to be harvested earlier with a lower sugar level and good flavor development.
The Harvest
Good post-harvest conditions after the 2019 vintage enabled the 2020 growing season to commence early and evenly, setting up a great quality harvest. Moderate temperatures throughout the growing season and the absence of the usual heatwaves resulted in good retention of aromatic and flavour compounds in the grapes. An early harvest resulted in grapes with super acidity and really complex flavour profiles.
The Cellar
The grapes were handpicked across various ripeness levels, between 20 to 22.5 brix, in an effort to increase complexity of flavor. They were de-stemmed and gently crushed. Minimal skin contact was allowed to ensure a pale pink hue. The must was cool fermented (54-61°F) in stainless steel tanks to maintain a fresh fruit profile, then aged on its lees for several months. It was lightly fined and filtered before bottling.
