The Vineyard
The vines are planted on De Liefde farm in the Breedekloof Valley (Wolseley).
Vine age – 17 years
Vine density – 3 500
Vines per hectare
Yield – 8 tons per hectare
Micro irrigation takes place before harvest. Vines are planted 1.30 meters apart to create density as that the vine can compete for nutrients feeding, what would create a concentrated fruit.
Intensive leaf and shoot management in October allows for even ripeness and shady fruit concentration development.
The Harvest
Grapes were picked at 23.5° Brix
The Cellar
Grapes had two weeks skin-contact in open fermenters. Skins and juice were mixed daily. After fermentation, the skins were pressed with 1.2 bars of pressure. Using only dried yeast, fermentation occurred over a two week period with the wine spending 16 months in new and second fill small French oak barrels.
